After the fermentation the wine is put to sharpen in oak barrels of 30 hls for about 12 months. It becomes “Reserve” after 2 years from the date of harvest . TASTING NOTES The Salice Salentino red obtained the D.O.C. after the worldwide commercial results of Leone de Castris’. This wine is characterized by an intense ruby red colour with garnet red reflections on aging. The red peel fruit’s perfume (plum,blackberry) is enriched by spiced notes as vanilla and liquorice. The intense, full taste is balanced and warm. Particularly suitable for roasted red meat ,aged cheese and game. To be served at a temperature of 16-18° C. ALCOHOL 13,50% VOL.
