Balsamic word is not, in origin, an appellation of vinegar, but simply an adjective which exists in French and in Italian (balsamico) and that indicates something that produces, contains some balsam. It is therefore the fûts of conservation that give its typical taste in balsamic vinegar. Thanks to its ageing of 3 years, this quality vinegar clears a powerful aroma and has a bitter-sweet taste which perfumes as well the salads as certain cooked dishes.
